Tomato salad from Chez Fonfon

This is my hyperfixation since I ate at Chez Fonfon in Birmingham Alabama, one of the best meals I’ve had in the past few years. This salad was life changing: ripe tomato seasoned w flaky salt and black pepper, light dressing w finely chopped shallots, olive oil, a bit of cucumber basil and castelvetrano olives and then this extremely lovely local goat cheese. I’ve been recreating at my house. Heavenly.
